1/2 cup toasted pine nuts
3/4 cup Parmesan, grated
2 cloves of garlic, grated
4 cups fresh basil leaves
1/2 cup fresh tarragon leaves
1/2 cup rough chopped fresh chives
1 cup fresh parsley leaves
3/4 extra virgin olive oil
1-2 tsp Salt to taste
Add pine nuts, cheese and garlic to a food processor and pulse until finely ground, about 1 minute.
Add basil, parsley, tarragon, and chives to the food processor and place the top back on. With the motor running, add oil in a slow and steady stream until pesto is mostly smooth, with just a few flecks of green, about 1 minute. Season with salt.
Transfer to a serving bowl, or store covered in the refrigerator. Let come to room temperature before serving.
