1 full head of fresh lettuce (these varieties work well: red leaf, butter, bib, baby gem)
2 Tbsp lemon juice (our favorites are Meyer lemons), or substitute vinegar if you have no lemons
1/2 tsp lemon zest
1 tsp honey (sugar or maple syrup will work too)
1/2 tsp whole grain mustard
1/4 tsp salt
3-4 Tbsp extra-virgin olive oil
fresh ground pepper to taste
First, let’s wash and dry that beautiful lettuce. The leaves should be dry, so the dressing will coat them nicely.
Zest your lemons and then squeeze the juice from them.
In a salad bowl, add the lemon zest, lemon juice, honey, mustard, and salt. Whisk until the honey and salt are dissolved. Slowly drizzle the oil in a slow stream, whisking constantly until the dressing is well blended (not separated). Season with fine salt and freshly ground black pepper.
Taste your dressing. If it’s too acidic, simply add more oil. If it’s too flat, add a little more lemon juice. If it’s not salty enough, simply add more salt! Once you’re done making the dressing, transfer the dressing from the big salad bowl into a small vessel.
Without washing the salad bowl, simply add the lettuce then drizzle the dressing over the top. Give the greens a nice toss and serve!
P.S. Feel free to add other ingredients to the mix. Some of our favorites are radishes, cucumber, fennel, fresh herbs, orange slices and a few nuts!
