2 pounds of cucumbers
1 Tbs minced garlic
2 tsp salt
5 tsp sugar
2 Tbs sambal chili spice
2 Tbs rice vinegar
1.5 Tbs sesame oil
2 Tbs chili flakes with oil
Prepare the cucumbers. Cut cucumber in half and then slice into quarters lengthwise. Turn cucumbers cut side down and smash with the flat side of your knife or any other hard, flat object. You want the skin to crack. Cut cucumbers into 1.5 to 2 inch pieces.
Place all cucumbers into a bowl and toss with 1 tsp of sugar and salt. Let rest at least 10 minutes then transfer to a strainer to let any liquid drain off.
While cucumbers are resting, make the dressing. Combine all remaining ingredients except sesame seeds into a bowl. Stir to combine.
Once you are ready to assemble, return cucumbers to mixing bowl and drizzle with dressing. You want the cucumbers to be nicely coated but not swimming in liquid. Store any extra dressing in an airtight container in the fridge.
Sprinkle generously with sesame seeds and toss to combine.
