6-8 small Persian cucumbers
1 tsp sugar
salt
2-3 tsp sesame oil
sesame seeds
Wash and dry cucumbers
Cut cucumbers in half lengthwise, and then in half again.
Cut cucumber strips into 1-inch pieces and add to medium bowl.
Sprinkle with sugar and salt (to taste) and toss to combine.
Add oil and sesame seeds and toss again.
Let rest for 5-10 minutes. Then transfer to a serving plate and sprinkle additional sesame seeds on top to garnish.
Serve with Hui Tou Xiang’s Dumplings.
