1 bunch Broccolini
1 lemon, juiced
1 cup white wine
1 Tbsp butter
1 Tbsp Calabrian Chiles, chopped
1 Tbsp garlic, chopped
Salt & Pepper
Bring a large pot of water to a boil and blanch broccolini for 2-3 minutes. Remove from water and plunge immediately into an ice bath. Let rest for 5 minutes then strain from water.
If you want, grill or broil the broccolini to give it some char.
Heat a large saute pan over medium heat. Add a drizzle of olive oil to coat the pan. Add chilies and garlic and cook stirring frequently for 1-2 minutes until fragrant.
Add wine to deglaze the pan– be sure to scrape up any garlic or chili pieces from the bottom of the pan.
Cook for a few minutes until reduced.
Add butter, lemon juice, and salt & pepper to taste.
Add Broccolini. Coat in sauce and serve
Enjoy alongside Provisional’s Pork Bolognese & Pappardelle.
